Fungal alpha amylase is submerged fermentation and refined extract by Aspergillus oryzae It’s mainly used in the production of malt syrup, also can be used in the industry of beer,baking, etc.
2. Principle
The enzyme is endo-amylase, can quickly hydrolysis amylose and amylopectin aqueous solution within the alpha-1, 4 glycosidic bond, to generate a large amount of maltose and maltotriose, glucose and other oligosaccharides.To generate a large number of maltose and a small amount of malt sugar, glucose and other chitosan.
3.Product Features
1, temperature range: effective temperature range 35-65 ℃, and the optimum temperature range 50 - 60 ℃.
2, pH range: effective pH range 4.5 - 6.0, the optimum pH range 4.8 - 5.5.
3, the influence of metal ions on enzyme activity: Ca2+ can have a little function to activate enzyme;Fe2+, Ba2+, Cu2+, Mn2+,Fe2+ enzyme has strong inhibition function.

5 Application Method
1, during the production of malt syrup, fungal alpha amylase is used to manufacture syrup which maltose content < 54%.Dosage :0.1 - 0.35 L/t dry matter, pH 4.8-6.0, 58-60 ℃ temperature to saccharify 6-30 hours.
2, beer industry, it can rise to increase the fermentation degree, improve the rate of residual sugar, eliminate cold turbidity.use it In the saccharification and fermentation process.
3, during fermentation processing, dosage 0.1-0.3 kg/t can improve the fermentation degree;In fermentation processing dosage 0.002-0.004 kg/t can eliminate cold turbidity,dosage 0.02 to 0.1 g/t can improve the rate of residual sugar.
4, in the foods production of bread and steamed bread, the enzyme could be used to provide the fermentable sugar, yeast to make noodles products uniform structure, increase size, gas ability.As a small experiment, recommend dosage 0.002-0.01 kg/t powder (100000 units of food-grade enzyme activity).In order to obtain a better effect, often used with xylanase.
